Homemade Dark Chocolate Marshmallows
Happy almost-Christmas everyone! It’s been a weird holiday season, with no snow in sight here in Northern Minnesnowta. But there’s nothing like a pile of delicious seasonal treats to get you in the holiday spirit, right? I know marshmallows might not be on your list of typical holiday treats, but, honestly, they should be. Especially these homemade Dark Chocolate Marshmallows. Marshmallows Are the New Cookies If you’ve been following along on this blog for a while, you may have noticed I’ve become a little obsessed with homemade marshmallows. Case in point, the three other marshmallow recipes I’ve already created: Some would call this a “problem;” I prefer to call it…

Soft Cut Out Sugar Cookies with Cream Cheese Frosting
Originally published March 2019; Updated Dec 2023 Soft, buttery, a little tangy, and slathered with a thick layer of creamy frosting: my list of what makes a perfect sugar cookie. You know those soft sugar cookies you find in most grocery store bakeries with the crazy thick layer of sugary frosting? Like those, only more buttery, less plastic-tasting (you know it’s true), and made with ingredients I can pronounce. These Soft Cut Out Sugar Cookies are the closest I’ve come to those infamous grocery store cookies. Soft, Satisfying, and Perfect for Holiday Baking! These cookies are on the softer side, but they still have a slight firmness that makes them…

Rosewater Marshmallows
Ok, I can already hear you thinking, “flowery marshmallows? Really??” And I get it — it’s a little unorthodox. But I love floral scents and flavors in baked goods. Plus, I’ve enjoyed rosewater in meringues before, so I thought, “why not put it in marshmallows?” And boy, am I glad I did! If you’ve ever had Turkish delight, you’ll have a general understanding of the flavor profile of these ‘mallows. They don’t have the pistachios you often find in Turkish delight, however (though sprinkling some chopped pistachios on top is a great idea). But their pink hue and the hint of rosewater in them is definitely reminiscent of that tasty…

German Chocolate Brownies
February is always chocolate month to me. Besides Valentine’s Day, it’s also ridiculously cold and dark up here in the north. We need plenty of chocolate to guide us through the second half of winter — because yes, we still have half the winter to go (sorry winter-hating friends, but it’s true). Well, more than half, because winter lasts until April here…or sometimes May…but I digress. The point is, we need a little extra chocolate this time of year. And what better way to up our chocolate intake than with rich, gooey brownies? Bonus points if they’re covered in a sweet, custardy, coconutty topping. Introducing your new winter BFF, German…

Tiramisu Brownies
Valentine’s Day is just around the corner. Whether you like this particular holiday or not, you have to admit it’s a great excuse to eat chocolate. And although we don’t actually need an excuse to eat chocolate, it’s still a great reason to make — and eat — an over-the-top chocolate dessert. Our assignment for Valentine’s Day 2022: Tiramisu Brownies. Brownies…But Sexier Yep, these beauties are a mashup of brownies and tiramisu. Think deeply fudgy brownies with pieces of ladyfingers mixed in, then covered in a thick, creamy mascarpone-whipped-cream-Kahlua topping and a hearty dusting of cocoa powder. A decidedly sexier version of brownies…perfect for Valentine’s Day. The Fudgiest Brownies This…

Chocolate Peppermint Cream Pie
My living room is lit with twinkling lights, there are Christmas carols playing through the speakers of my record player, and my freezer is full to the brim with Christmas cookies. All sure signs that Christmas is coming soon. Now all that’s left is to plan my holiday meal, and maybe an extra-special treat for dessert. This Chocolate Peppermint Cream Pie will fit the bill nicely. Chocolate and Peppermint: A Match Made in Winter Somewhere around the beginning of November, or the first snowfall, or whichever arrives first, my tastebuds undergo a drastic change. They shift from craving pumpkin and cinnamon to a flavor combination that I’ve come to associate…

Meringues
Meringues are one of my favorite desserts. Meringue is an amazing thing: It can take many different forms, from the soft, slightly toasted fluff on a pie to crisp-on-the-outside, soft-on-the-inside pavlova to light, airy, melt-in-your-mouth morsels that crumble to bits as you eat them. Today we’re taking a look at the last one. These light-as-air treats are a delight to eat on their own and also make great decorations for other desserts like cakes, cupcakes, and tarts. They’re incredibly versatile, as you can make them pretty much any size and shape you like, with endless flavor options. Meringue can be tricky to make – I’ve personally been working on perfecting…
