Peanut Butter Chocolate Chunk Granola
Growing up, I always wanted the sugary cereal for breakfast. Cookie crisp especially. I mean, what kid doesn’t want to eat cookies for breakfast? (Or what adult, for that matter??) Unfortunately for my childhood self, my Mom insisted I eat the healthy cereal (Shredded Wheat, anyone?), and I rarely got to indulge in that sugary goodness. So, this Peanut Butter Chocolate Chunk Granola is my way of having my Cookie Crisp and eating it too. (Oh, and thanks Mom for trying to keep me healthy – love you!)
If you’ve never made your own granola before, you may be surprised at how easy it is to do. If you can stir things, set a timer for the oven, and stir things some more, you’ll be set. Ready to get started?
Ingredients and Method
Basic granola has just a few ingredients – oats, nuts/seeds, oil, and sweetener. In this recipe I replaced the oil with peanut butter. I also used natural peanut butter, because I prefer it, but you can use any kind you want. I also like to sweeten my granola with natural sweeteners – honey and molasses in this case – but brown sugar works great as well.
The method to make granola couldn’t be simpler either – stir together all of the ingredients, spread onto a cookie sheet, and bake! Boom – granola. And it lasts forever if kept in a cool dry place in an airtight container. You’ll never need to buy cereal again!

Peanut Butter Chocolate Chunk Granola
Ingredients
- 3 c Rolled Oats the old-fasioned kind
- 1/4 c Pumpkin seeds/Pepitas
- 1 c Walnuts, Pecans, or Peanuts
- 1/4 c Peanut Butter
- 1/4 c Honey
- 1/4 c Molasses
- 1/2 tsp Vanilla extract
- pinch Sea Salt
- 1/2-3/4 c Chocolate Chunks or Chips
Instructions
- Preheat oven to 350°F. Line one big or two smaller cookie sheet(s) with parchment paper.
- In a large bowl, mix together oats, pepitas, and walnuts. Set aside.
- In a separate smaller bowl, mix together peanut butter, honey, molasses, vanilla, and sea salt. Use a whisk to make sure ingredients are well-mixed.
- Add peanut butter mixture to oat mixture, and stir until well combined and all of the dry mixture is moistened.
- Spread granola in a thin layer on the cookie sheet(s).
- Bake for 7 minutes.
- Stir well, then bake for 5 more minutes.
- Stir again, and bake for about 2 more minutes, or until granola is toasted and beginning to dry out (it will get drier and crisper as it cools).
- Remove from oven and set on a cooling rack. Allow to cool completely, or at least 30 minutes.
- Stir in chocolate chunks and enjoy!
- Store in an airtight container in a cool, dry place. Granola should stay fresh for several weeks. Makes 6 cups.
