Matcha Pistachio 7-Layer Bars
Holiday baking season is in full swing, and I couldn’t be more thrilled. It’s absolutely my favorite time of year, baking-wise. For the past few years, I’ve given baked goods as gifts for family and friends (no one really needs more stuff anyway), so I spend the weeks between Thanksgiving and Christmas baking every chance I can get. And while I have a ton of old family recipes and my own favorites that I bake every year, I like to try out one or two new ones as well. This year, I’d been thinking about making something with matcha and white chocolate (it’s a fantastic flavor combo, plus matcha is…

Mini Almond Biscotti
One of the first times I visited a newer coffee shop in town, I ordered my usual coffee (decaf americano), and it came with a teeny tiny almond biscotti. It was adorable. And delicious. I knew then and there that I had to go home and make my own mini almond biscotti. And here they are! Mini But Mighty These cuties have every bit of the flavor of a regular-sized biscotti, but in mini form. They’re the perfect little treat for your afternoon coffee break (or for breakfast…you do you). Plus, they’re easy to make. If mini isn’t your jam, I have a regular-sized biscotti recipe on the site too.…

Nutty Chocolate Chip Cookies
I don’t know about you, but I never stop wanting to bake (and eat) chocolate chip cookies. Don’t get me wrong, I love baking all kinds of treats (thus…this blog exists), but I’m always thinking of different kinds of chocolate chip cookies to make. (Case in point…check out the list at the end of this post) Anyway, these Nutty Chocolate Chip Cookies have been floating around in my brain for months, and I finally got around to making them and writing up the recipe. Nuts and Chocolate Are Besties If you’re not a nut lover, you probably won’t like these cookies. You could leave them out, I suppose, and you’d…

Maple Pecan Pie
Updated November 2023 Pie month continues with one of my favorites — Maple Pecan Pie! I’ve always loved Pecan Pie. It’s such a rich, toasty, nutty flavor that goes great with a scoop of ice cream or a dollop of whipped cream. This version swaps pure maple syrup and a touch of molasses for the usual corn syrup, resulting in a distinctly fall-ish flavor — perfect for your Thanksgiving feast! A Dessert Table Alternative to Pumpkin I LOVE pumpkin pie, but I know that not everyone else does. This pie is a great alternative for your guests who’d rather not partake of the pumpkin. This recipe is slightly adapted from…

Biscotti – A Cookie Made for Dunking
I’m a dunker. I love dunking a crispy cookie into a steaming cup of coffee (or better yet, espresso!). When I bake cookies and inevitably leave a batch in the oven too long, I don’t consider them ruined – they’re perfect for dunking. Are you a dunker? If so, you probably already love biscotti. But if you haven’t made your own at home yet, you’ll want to keep reading. Biscotti is one of my favorite treats to dunk. These crispy Italian cookies are sort of like the crouton of the dessert world. They’re supposed to be REALLY crunchy – to the point where it’s hard to bite into them without…

Buckwheat Rhubarb Muffins with Pecan Streusel
Back this week with another rhubarb recipe for you guys – break out your muffin tin, because you’re going to love these Buckwheat Rhubarb Muffins! Earthy, musky buckwheat combines with tart rhubarb and a sweet, nutty streusel to create the breakfast of your dreams. Am I overstating how delicious these are? Maybe. Guess you’ll have to find out for yourself! Rhubarb grows plentifully here in northern Minnesota. I’m always a little baffled when I see it in the grocery store. Never in my life have I had to buy rhubarb – it basically grows like a weed here (not in the sense that it grows in the wild, just in…

Cinnamon Toasted Flax Seed
Have you watched the show “Psych”? I recently watched all 8 seasons (thank you Amazon Prime), and in the last episode Shawn discovers a tasty treat that he calls “the only healthy thing that has ever tasted good, ever” – spiced flax seed. Now, this recipe isn’t that flax seed exactly, but it’s definitely what I imagined while I was watching the show. This Cinnamon Toasted Flax Seed is sweet, cinnamon-y, crunchy, so delicious, and yes, healthy(ish). If you’ve ever made spiced toasted nuts of any kind, this is the same concept. In fact, to create it I adapted this recipe for Cinnamon Roasted Almonds by Two Peas and Their…
